James Beard’s Irish Soda Bread

Corned beef and cabbage, either you absolutely love it or absolutely loathe it. I am firmly in the love corned beef camp especially when there is a loaf of soda bread sitting next to it.

There are many different recipes for soda bread. Traditional Irish soda bread only contains flour, salt, baking soda, and buttermilk and produces a malty, dense loaf of bread. I like my soda bread with a smear of butter and some jam.

James Beard's Irish Soda Bread

1 ½ cups whole wheat flour
½ cup all-purpose flour
1 ½ tsp sugar
1 ½ tsp salt
½ tsp baking soda
¼ tsp plus 1/8 tsp baking powder
¾ to 1 cup buttermilk

Preheat oven to 350 degrees. In a medium bowl, combine the flours, sugar, salt, baking soda and baking power. Add buttermilk and mix well. Divide the batter evenly between two 5 x 3 inch loaf pans sprayed with cooking spray. Bake at 350 degrees for 30-40 minutes or until a toothpick inserted in the center comes out clean. 2 loaves
