Ban the Can — Cream of Soup Substitute

I don’t know what condensed cream of soups are made of but it scares me. Soups aren’t meant to come out of a can in block. Fortunately, I have something for your casseroles that doesn’t resemble a chemical laden science experiment gone wrong. Each of the following recipes makes the equivalent of one can soup and is easily halved for partial can measurements.

Cream of Cheddar Cheese Substitution


Ingredients
3 TBS butter
3 TBS flour
1 cup milk
1 cup shredded cheddar cheese

Melt butter in a sauce pan over medium-low heat. Add flour and whisk until smooth and bubbly. Remove from heat and gradually add milk, whisking to keep smooth. Return to heat and bring to a gentle boil whisking constantly until thickened. Add cheese and stir until melted. Season with salt and pepper.

Cream of Chicken Substitution


Ingredients
3 TBS butter
3 TBS flour
½ cup chicken broth
½ cup milk

Melt butter in a sauce pan over medium-low heat. Add flour and whisk until smooth and bubbly. Remove from heat and gradually add milk and broth, whisking to keep smooth. Return to heat and bring to a gentle boil whisking constantly until thickened. Season with salt and pepper.

Cream of Mushroom Substitution


Ingredients
3 TBS butter
3 TBS flour
1 cup chicken or vegetable broth
½ cup finely chopped mushrooms
Melt butter in a sauce pan over medium-low heat. Add mushrooms and saute for two or three minutes. Add flour and whisk until smooth and bubbly. Remove from heat and gradually add broth, whisking to keep smooth. Return to heat and bring to a gentle boil whisking constantly until thickened. Season with salt and pepper.

Cream of Onion Substitution


Ingredients
3 TBS butter
3 TBS flour
1 cup chicken or vegetable broth
½ cup finely chopped onion
Melt butter in a sauce pan over medium-low heat. Add onion and saute two to three minutes. Add flour and whisk until smooth and bubbly. Remove from heat and gradually add broth, whisking to keep smooth. Return to heat and bring to a gentle boil whisking constantly until thickened. Add cheese and stir until melted. Season with salt and pepper.
