40 Dollar a Week Challenge Menu — Week Two

It was hard to come up with a menu for this week because I haven’t really wanted to cook. My kitchen was full of dirty dishes that I didn’t want to deal with because Of work stress and cold that I just can’t seem to shake. This week I am keeping things simple because I’ll be getting ready for 9 days of vacation. My best friend, Debby, is coming to spend a few days with me so I need to get things cleaned up and in order. I won’t have time for complex meals but that doesn’t mean I can’t eat well.

Breakfast
Thursday– bagel, hard boiled egg
Friday — pancakes, eggs
Saturday — homemade hot cereal, milk, homemade muffins
Sunday– crepes, sauteed apples, eggs
Monday — oatmeal
Tuesday — spicy kale cups, toast
Wednesday — oatmeal

Dinner
Thursday — cookie dough oatmeal, 2 hard boiled eggs
Friday — sloppy Joes, noodles, salad/dressing
Saturday– homemade pizza, salad/dressing
Sunday — bean and ham soup, homemade bread, dessert
Monday — easy bean burgers, seared green beans, noodles
Tuesday — leftovers
Wednesday– tuna noodle casserole, broccoli
