Steph’s French Toast Bake

I am celebrating this morning. I was scheduled late at the bakery. It is only an hour later but feels like heaven being able to sleep almost 2 extra hours. I am only working 4 1/2 hours on a Saturday and it is my last day of work before I leave for a 9 day vacation. All in all, I think it is going to be a very good day.

Steph's French Toast Bake

3 eggs
1 ½ cups milk
2 TBS white sugar
2 TBS brown sugar
2 ¼ tsp cinnamon
¼ tsp nutmeg
½ tsp vanilla
1 medium granny smith apple, cored and sliced

Preheat oven to 350 degrees. Tear bread into small chunks and place in a medium sized bowl. In a separate small bowl, combine eggs, milk, cinnamon, and vanilla. Whisk well to combine. Pour the egg mixture over the bread cubes and let soak while you core and slice the apple into a 6 cup baking dish. Sprinkle the white and brown sugar over the apples. Pour the soaked bread evenly over the apples. Bake at 350 degrees for 1 hour. Remove from the oven and let stand for 5 minutes before serving
