Ham and Cheese Rye Muffins

So apparently, I can add blogging to the list of things I shouldn’t do while sleep deprived. I somehow managed to publish this post with no picture, text I decided to delete, a recipe with no instructions and absolutely no recollection of doing so. I am sorry for any confusion this may have caused. I also hope my mistake won’t keep you from trying these muffins. They are really good, especially for breakfast after a good nights sleep.

Ham and Cheese Rye Muffins

1 1/4 cup all purpose flour
1/3 cup rye flour
2 tsp baking powder
1/4 tsp caraway seeds
1/4 -1/2 tsp onion powder
1/4 tsp salt
1 lightly beaten egg
3/4 cup milk
1/4 cup oil
2/3 cup finely chopped ham
In a medium bowl, combine the flours, baking powder, caraway seeds, onion powder, and salt. In another bowl, combine the egg, milk, oil, ham and 1/2 cup of the cheese. Slowly add the wet mixture to the dry mixture and mix well. Fill greased muffin tins 2/3 full of batter. Top each muffin with a bit of the cheese. Bake at 350 degrees for 20 minutes or until a tooth pick inserted in the center comes out clean.
