A Small Batch Christmas — Gingerbread

Thanksgiving 2014 was my first major holiday as a food blogger. I was planning and prepping recipes for months before the holiday. I got so into planning a menu for Thanksgiving, I kind of forgot to plan anything for Christmas. So this year I am planning a lot of small batch Christmas treats to share with you. Some of the treats are traditional to the holiday. Some of the treats are traditional to my family. Some are things I tried that are things that are going to become new Christmas traditions for me. I hope you enjoy them all.

Let us start our small batch Christmas baking with a traditional Christmas treat, Gingerbread. What I really like about this gingerbread is it isn’t overly sweet. In fact, it leans to the spicy side.

Gingerbread


Ingredients
2 TBS butter, at room temperature
1/4 cup plus 1 tablespoon brown sugar
1 large egg white
1/2 cup flour
1/4 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground ginger
1/4 tsp baking soda
2 TBS molasses
2 TBS boiling water
Preheat oven to 350 degrees. Spray 5 x 3 inch pan with non-stick cooking spray: set aside. In a medium bowl, combine the flour, baking soda and the spices. In another medium bowl, combine the butter and brown sugar, mix well. Add egg white and stir to combine. Sprinkle the butter mixture over the top of the flour mixture. Combine lightly before add the molasses and water. Pour the batter into the prepared loaf pan. Bake 35-40 minutes before removing it to a rack to cool completely.
