Spicy Mandarin Cake

I am not sure how it is March already but here we are. My podcast isn’t quite far enough along to get up and running yet so I am now shooting to have it up in running in May. I have been listening to a lot of podcasts, both cooking and non cooking, and have a lot of ideas of what I want and don’t want my podcast to sound like. I am not posting anything until it is the best it can be and its just not there yet but its getting closer every time I sit down and work on it.

My friend, Randy, and I have a reoccurring debate. Randy says cake and muffins are two totally different things. I say the only differences between muffins and cakes is the pan we bake them in and the the time of day we give ourselves permission to eat them. What do you think? Do you agree with me or Randy?

Spicy Mandarin Cake

I am not a fan of toppings on my muffins or cakes unless it is an obscene amount of buttercream or cream cheese frosting so I left it off and its still good.

1/4 cup mandarin oranges, cut in half

3/4 cup flour

1/4 cup sugar

1 tsp baking powder

1/4 tsp nutmeg

1/4 tsp salt

1/8 tsp allspice

2 1/2 TBS butter, cut into cubes, softened

1/4 cup milk

3 TBS lightly beaten egg

Topping:

2 TBS sugar

1/4 tsp cinnamon

2 TBS butter, melted

Preheat the oven to 350 degrees.   Spray a 3 cup bundt pan, a 6″ cake pan or a 6 cup muffin pan with non-stick cooking spray; set aside.

In a medium bowl, combine flour, sugar, baking powder, nutmeg, salt and allspice, mix well.  Using two knives, cut the butter into the flour mixture until it resembles course crumbs. 

In a small bowl, combine the milk and egg, mix well.

Combine the wet ingredients with the dry ingredients and mix until the all the flour is moist.  Fold in the mandarin oranges. 

Pour the batter into the prepared bundt pan, or cake pan. If using the muffin cups, fill each cup 2/3’s full. Bake the bundt pan or cake pan bake 20 minutes or until a toothpick inserted in the center comes clean. If you use muffin pans, bake for 12 -15 minutes or until a toothpick inserted in the center comes out clean.

While hot, dip cake or muffins in the melted butter and then in the cinnamon and sugar. Letcoolserve.
